Q: If I want to spend an extra day at Grand Canyon to hike and find accommodation myself and join the next tour the next day, is that possible? I can vacate the room in Las Vegas for the intermediate and just keep my bag in storage.

You can leave the tour group before tour ends but you will not be able to re-join another tour group at a later time at the Grand Canyon.
